The smell of cinnamon brings out the New Englander in me. One whiff and I would start pining for apple orchards, hayrides, and a big piles of raked leaves ready to be jumped in, even though I actually grew up in a city and rarely did all that bucolic fall stuff. But 'tis the time of year. Or is it? Here in Beijing, the days have confused me slightly; hot and muggy one day, cool and crisp the next. I spent my last fall in Colorado and California, but I still remember all those years of living in the Northeast when summers dragged late into September, well after the kiddies have gone back to school and clothing stores have purged themselves of anything short-sleeved. This cinnamon and ginger tea, served cold, is possibly the perfect transition drink for September.

Many of the recipes in this book are from Paul and Peggy's families and friends, from the wonderful ladies who worked for them, and from a few loyal customers.

I was very fortunate to grow up with two wonderful and caring grandmothers. My maternal grandmother, Jesusita, passed away when she was 98 years old, and my paternal grandmother, Anita, passed away at the age of Just the other day, I was thinking about the incredible lives they lived, and all they experienced. Although they only met each other a couple of times they had a lot in common, and I have a feeling they would have enjoyed each others company. Both of their husbands passed away young and they were left to raise their children alone. They were both strong women, fabulous cooks, and very healthy. I was starting to wonder if there was a secret ingredient in common, and then it hit me… Cinnamon!
